Bred for mizutaki

Hakata Jidori was developed in Fukuoka as the right chicken for two local dishes: mizutaki, a chicken hot pot born in Fukuoka City, and gameni, a simmered chicken and vegetable stew. The meat is firm and springy and does not fall apart when cooked for a long time.

The taste

It is rich in inosinic acid, one of the compounds behind umami, so the meat and the broth both taste full. It has been sold under the Hakata name, the old name for the area, since 1988.

Good to know

  • Mizutaki usually starts with a cup of the clear chicken broth on its own; finish the pot with rice or noodles.
  • Gameni (also called chikuzen-ni) is a common home and bento dish across Fukuoka.
