Under Mount Daisen

Mount Daisen is the highest peak in western Japan's Chugoku region. Around its foot in Tottori, the land is covered in well-drained black volcanic soil rich in organic matter, plus sandy loam. The average temperature is about 15°C, with about 8°C between day and night, good weather for broccoli.

A big name in Japan's markets

Growers follow strict shared methods built over many years. Daisen broccoli is one of Japan's leading brands, with about a fifth of the Nagoya market, its biggest buyer, at prices about 10 percent above average.

How to eat it

Steam or blanch it briefly, or add it to stir-fries and tempura. Fresh broccoli is sweet enough to need only salt.
